A progressive local supermarket group who operates a number of well-known Supermarkets across Connacht, located in close proximity to Sligo town and within driving distance from Donegal, is seeking a skilled Butcher for their store.

Our client is looking for an experienced Butcher to join their busy butcher department. This is a hands on role suited to someone with a strong background in meat preparation, whether gained in a retail butcher shop, supermarket, or meat processing environment. As a Butcher, you will serve customers, prepare and present high-quality meat products, and help maintain excellent standards of customer service, product quality, and presentation throughout the department. You will play an important role in creating a positive shopping experience while ensuring the counter is fully stocked and attractively displayed.

The successful candidate will be responsible for overseeing the daily operation of the butcher department, including setting up the counter, managing stock levels, and ensuring all products are prepared and presented to the highest standard. You will maintain strict food safety and hygiene procedures while consistently monitoring product quality and reducing waste.

As Head Butcher, you will also lead and support the team, ensuring smooth day to day operations and delivering excellent customer service. Strong leadership, attention to detail, and a customer-focused approach are essential for this role. Key Responsibilities
  • Oversee the daily running of the butcher department.
  • Prepare, cut, and present a wide range of fresh meat products to a high standard.
  • Lead, support, and motivate the butcher team to deliver excellent performance.
  • Train and develop junior staff to improve skills and efficiency.
  • Ensure excellent customer service and handle customer queries professionally.
  • Manage stock levels, place orders, and reduce waste and shrinkage.
  • Maintain high standards of food safety, hygiene, and HACCP compliance.
  • Set up and maintain attractive, well stocked meat displays.
  • Monitor product quality and ensure consistency across all items.
  • Work closely with store management to improve sales and department performance.
Requirements
  • Minimum 2+ years' experience as a butcher, ideally in a retail or supermarket environment.
  • Ability to delegate tasks clearly and keep the team organised during busy periods.
  • Strong communication skills to guide, train, and support team members.
  • Ability to motivate staff and maintain a positive working environment.
  • Experience ensuring consistent product quality and service standards across the team.
  • Good understanding of scheduling, daily operations, and workflow management.
  • Confident handling customer service while overseeing team performance.
  • Strong knowledge of food safety, hygiene, and HACCP compliance.
  • Ability to step in and lead by example in a hands on role.
  • Focus on reducing waste, improving efficiency, and meeting sales targets.
