Head Chef - The Oak Room

As we continue to evolve and build on our culinary reputation, we are now seeking an exceptional Head Chef to lead the The Oak Room, our Michelin-starred restaurant, on a permanent contract.

The Role

As Head Chef, you will report to the Executive Head Chef and have full culinary and operational responsibility for The Oak Room, leading the kitchen with creativity, integrity, and excellence. You will:

• Lead the vision, creation, and execution of elegant, seasonal tasting menus inspired by the finest Irish ingredients
• Maintain and evolve Michelin-star standards, ensuring consistency, precision, and attention to detail at every service
• Provide inspirational leadership to the kitchen brigade, fostering a culture of professionalism, mentorship, and continuous development
• Oversee menu development, sourcing strategies, and supplier relationships, working closely with Ireland's best producers
• Ensure the highest standards of food quality, organisation, hygiene, and cost control
• Collaborate closely with senior leadership and front of house teams to deliver a seamless, world class guest experience

This is a hands on leadership role for a Head Chef who thrives in a high performance environment and takes pride in excellence, restraint, and craftsmanship.

About You

• Experience as a Head Chef or Senior Sous Chef within a Michelin starred or equivalent high end restaurant
• A strong understanding of seasonality and modern Irish or European cuisine
• Confident, calm leadership with the ability to inspire and develop a high performing brigade
• Exceptional attention to detail, organisational strength, and commercial awareness
• A creative yet disciplined approach to cooking, allowing produce to shine
