Sous Chef West Sussex

Salary: £39,000 + £5,000-£6,000 tronc

45 hours per week, 2.5 days off per week.

Working alongside a talented Head Chef, you'll play a pivotal role in menu development, team leadership and delivering an exceptional guest experience using fresh, seasonal ingredients.

About the Venue
  • Independent, 150-cover restaurant
  • Modern British menu focusing on seasonal, locally sourced produce
  • Fresh dishes prepared to order plus changing daily specials
  • Busy and varied service including restaurant dining, weddings and private events
Your Responsibilities
  • Leading and developing a team of 12 chefs
  • Collaborating with the Head Chef on menu creation and specials
  • Ensuring quality, consistency and efficiency in service
  • Taking charge in the Head Chef's absence
  • Managing stock, ordering and maintaining GP targets
  • Overseeing weddings, events and large bookings
  • Upholding food safety and hygiene standards
  • Building strong working relationships with FOH
About You

You're a skilled Sous Chef (or an experienced junior ready to step up) who thrives in a fast paced, fresh food environment. We're looking for:

  • Experience in quality restaurants or gastro pubs
  • Strong knowledge of seasonal, fresh cooking
  • Natural leadership and team development skills
  • Calm, organised approach under pressure
  • Understanding of cost control, GP and waste management
  • Creativity and enthusiasm for menu input
  • Reliable, detail-focused and professional
  • Own transport essential
