Set just a three-minute walk from the Manor House, The Carriage House is a beautifully restored dining destination offering effortless luxury and relaxed elegance. Open to residents and non-residents, it welcomes guests for:

• Lunch and dinner seven days a week
• Breakfast from Friday to Sunday

About The Role

We are now recruiting for a Sommelier to join our Carriage House team.

Working as part of our Food & Beverage Team and directly with our fantastic Head Sommelier, you will help oversee one of the finest wine cellars in Ireland. Our impressive wine listings include:

• Over 780 labels
• Wines from 20 countries
• Vintages dating back to 1934

You will join a knowledgeable, passionate Sommelier Team dedicated to enhancing our wine culture throughout the resort.

Key Responsibilities

• Deliver warm, personalised, and expert wine service to our guests.
• Confidently guide guests through our extensive wine programme.
• Support cellar management, including stock control, organisation, and ordering.
• Assist in the evolution of our wine lists and pairing experiences.
• Provide wine education and training for the wider Food & Beverage team.
• Maintain impeccable service standards reflective of Adare Manor's excellence.

About You

We are looking for a beverage professional who matches the exceptional standards of the resort.

Requirements:

• WSET/CMS Level 2 (or equivalent)
• At least 2 years' experience as a Sommelier in luxury hospitality
• Strong knowledge of French and New World wines
• Ability to perform under pressure in a dynamic service environment
• A true passion for wine and exceptional guest service
